Nick is possibly one of the best chefs in Portland who has the good fortune of having a business that reflects his passion for food, and his own brand of entertaining that can be brought to you instead of being limited to the confines of a restaurant. He made me feel completely at ease from the very start, and planning the menu and details /logistics of the tables and tents was a fun process because he is very flexible and open to your ideas. I had a graduation party for my husband, and the menu included the smoked beef brisket (fork tender, smokey juicy), parchment baked salmon, the best vegetarian lasagne I have every tasted, chicken skewers, pea salad (which he made especially for my husband, who loved it), proscuitto wrapped figs stuffed with cherve (fantastic!), tiny cesaer salad cups that were delicious even the next day, gorgeously cut seasonal fruit, bruschetta appetizers and the finale was a strawberry tiramisu that was absolutely melt in your mouth. He and his lovely wife and other assistant wore very nice black stylish uniforms, and were seamless in setting up the buffet table (beautifully decorated in greens, cloth and flowers), they kept the appetizer plates flowing, and considering they were working in a kitchen the size of a jet airplane galley turned out amazing mouthwatering food. At the end of the party they packaged all the leftovers in containers for us to take home, and made plates for any guest who requested them for taking home. They used cutlery and plates made out of 100% environmentally friendly materials. I highly recommend Nick's expertise and knowledge in fine food and entertaining, and will definitely use him again for another party and recommend him to others needing that special touch for their big day or memorable event. He will make it that much more so for you. He is an absolute delight, the value of the food and service were well within my budget, and my guests are still raving about the experience.
