The Pappas family have always sustained some of the best restaurant experiences I have encountered in life. I first ate at Pappasitos in Houston during the late 1980's. When the menu changed, some years back, the quality started to fall off. Tonight, I ate at the location in Austin. The chicken enchiladas, with the red sauce, were still pretty good; however, the hard shell chicken taco: a) had no red sauce; b) tasted very bland & c) was not as good as Taco Bell. The recipe for the Charo beans was rather boring & tasteless. The reason I am writing this review centers on the horrible fajitas that my wife ordered. In the past, not many Tex-Mex chains touched Pappasitos with their deep-charred flavor that was out of this world. Now, they have none of that taste. I would find better fajitas in the meat counter at HEB. No more Pappsitios for me. It is not worth the money they want. Is corporate falling asleep & not monitoring quality? Something has changed in this restaurant chain and it is not good. When taste goes south, corporate is usually involved. Think of it this way, if the Colonel were alive, he would die from what is being served at KYC. The same goes for the Pappas chain. Pros: Great chips and sauce, fresh tortillas Cons: Expensive for the product given
