The Rum Jungle in the Mandalay Bay is a lot of fun. Not only do they apparently have the largest rum bar in the world, they also have great food. They have one option on the menu where they will just bring you plates and plates full of different kinds of meat. It is enough meat to make most vegetarians cry. I love it.

Fondue Fred is by far the best Fondue restaurant I've been to. Not only is it cheap (it is possible to get out of there for under $50 for two people), but the food is great. I love The Melting Pot, but Fondue Fred is in a whole different league.
Get the Blue Cheese Fondue.
