Belly Up to the Bar

The great news is, Seattle has an of riches when it comes to fish in general and sushi in particular. While lots of people are steadfast Shiro's fans, I say cross the street and walk a couple blocks and belly up to the bar at Saito's (2122 2nd Ave).
Rest assured in Saito's capable hands. He has absolute command of his station, the always active sushi bar. The stylish, but relaxed room is big and rarely feels crowded.
There is not much sushi I don't love, but in March when Alaska halibut is at its best, order the hirame (flounder, often halibut) with chiso (herb with minty-licorice notes) and ponzu sauce (lemony soy sauce).
