Just down the road from PLU, NPCC is a great little coffee shop also serving sandwiches, bottled beer, etc., occasional entertainment, and lots of tables for visiting and/or studying. It definitely has a college-like feel to it and most of the clientele are current or recent students at PLU, but for the most part it remains pretty chill and thus is not obnoxious to visit even though I am now long removed from my days as a Lute. If you find yourself in Parkland, this is a great place to sit down and relax.
