This is the true case of where getting to know the people running the show makes your experience that much better. One of the best things about any sushi restaurant is being able to sit at the bar and talk with the chefs. Learn what they like to make, and they'll learn what you like to eat. Mr. Toyoda knows what I like, and knows that I'm willing to try new things. So it's no big deal when he puts a plate of sea snails or monkfish liver in front of me. I'm not giving away any secrets of the place - other than to tell you to sit at the bar, watch, listen, and conversate. Your dining experience will be that much better!
