The Blue Parrot is one of those long-established restaurants that truly deserves the reputation that they’ve garnered over the years. If you’re used to the generic Italian food found at any national chain, make the extra drive from the Denver metro area to Louisville and check out this little gem. The spaghetti is very thick compared to what a traditional idea of a noodle should be, but don’t let; that dissuade you from trying out their signature dishes. While the menu appears very basic (spaghetti, fettuccini, etc.), try spicing up your order with a meatball or Italian sausage….you won’t be sorry.
