Canlis rules Seattle! It has for over 50 years. I've dined at Canlis for the last 12 years and it is a Seattle icon. The food is as fine-dining and gourmet as it gets and yet the place isn't stuffy but elegant and extremely lively. The younger gen needs to "find" and experience Seattle's best restaurant.
