Trapper used to run a sushi restaurant in a local casino and I am glad he got his own place! Timmy and I also used to work together and I have been to Sushi Town since it opened and it is legions better than the little place in Auburn! Trapper has really been able to make some of his signature dishes and I know he brought a lot of his old customers with him to Bonney Lake. I have been to sushi in Minneapolis, Bozeman, Washington D.C. and Hawaii and I can tell you that I always compared it to Trapper's sushi at the place we used to work. Sushi town is at a whole new level and the secret is the rice! Sushi in other restaurants tend to have fancy names and interesting ideas, but always tend to fall flat because of the rice. Trust me as a former employee, Trapper has outdone himself with Sushi Town. I am moving back to Bellevue and plan to be a regular patron.
