We moved to Layton from Salt Lake City a year ago and we LOVE Mexican food. I think we've tried every Mexican restaurant in the area and have to say that our favorite is Fiesta Guadalajara. Their burrito sauce is the best I have ever tasted -- so fresh and light. I could eat it by the bowl full. Their chile verde is occasionally a little spicy for me but the rest of the family thinks it's just right. We have always found the service to be excellent and if we have needed attention, any one of the other wait staff will cheerfully come to our aid. Give it a try. I know you won't be disappointed. Some of the friendly wait staff in town work at Fiesta.
Pros: Excellent fare, reasonably priced, friendly service
Cons: Is a little dark in the dining room but some people like it that way.
