If this were the 1st restaurant I ever tried sushi at, I would never try it again! It was horrrrrrrrrible. We sat at the sushi bar, and while trying to get through a soggy albacore tataki salad (the fish was soggy-yuck), my friend and I watched the "itamai-san" use three different, dirty rags to wipe off the cutting board and pat dry their soggy fish before placing it atop the rice.
I sit at the bar, in front of the fish case, so I can see the fish. At Chiso, I saw the fish and more than an eyeful of other things that prompted me to wrap up the meal and vamoose it across the street for $3 Manny's at the Dubliners!!!
Take a pass on this place for sushi. Try a place where the fish is fresh and handled with love!

I've been heading to Chiso's off and on in the 5 or 6 years since it opened, sharing some of the staff from I Love Sushi. In time, Chiso has developed into a mature, refined sushi presence in Seattle, and (IMHO) it's a fine place for elegant, albeit somewhat non-intimate dining. I've enjoyed bringing dates there for a lighthearted evening, although the tables are a bit close together for true intimacy. (I've found this problem at smaller places like Shiro's, for instance, where you can't help but overhear your fellow diners' conversations...or have them listen in on yours!) If seated at a table, the waitstaff are always eager to make recommendations, and if at the bar, you can feel confident that you can trust your dining experience to your chef's hands. Gochi sou sama deshita!
Pros: unique, mature atmosphere; confident staff

We visited Chiso for the first time a few weeks ago just as a change of pace from our regular sushi restaurants. We weren't disappointed! We took at seat at the bar and the sushi chef immediately greeted us with a smile and welcomed us. The sushi and sashimi were all delicious, and the prices weren't bad for a sushi restaurant. Would definitely recommend!

Although the entrance wasn't overtly obvious, when you walk into Chiso the environment grabs you. The service was good and the menu was decent. The variety of sushi available was good and the freshness of their seafood is recommended. Typically I like to sit at the sushi bar, but it was full the entire time I was there. The wait staff was very prompt when asking for chef recommendations and was very helpful when asking about the history of the restaurant. Overall I thought the menu was overpriced for what was served.

Chiso is my favorite place for sushi. Taichi is incredibly talented and the fish is extremely fresh. There are alot of vegetarian options as well. The restaurant itself is inimate and I enjoy both the sushi bar and the table seating. The lychee martinis and green tea ice cream are also delicious! Fabulous, attentive service and delicious food keep me coming back.

We were looking for a place to share a special dinner before going out of town for a month, and we agreed this restaurant was exactly what we were looking for. I'm a little picky when it comes to certain kinds of sushi but I ordered the chef's choice and loved everything that came with the order.

I'm tired of trendy sushi bars, where the cocktails are more important than the raw fish. So I really wanted a sushi bar in my neighbhorhood where the food was the focus. I think Chiso is that place. The waitstaff are not children (sorry Rain - you're good otherwise), the sushi chef was a super dude, and the fish tasted superb. Bring more money than you would bring to say, Blue C, but I guarantee you'll enjoy it!

Get a cup of hatsumago and enjoy quality sushi at a small and stylish corner of Fremont. Before coming here, I was a conveyor-belt-sushi fanatic, but the quality really stands out at Chiso. The hatsumago cant be missed; it is the perfect touch to any sushi on the menu. There is small capacity for seating, so arrive early. The ETA for orders can get quite long, so order plenty for the 1st round. The waitresses have always been friendly and knowledgeable of the menu, during my experiences. The menu has a good variety of sushi, and the quality is consistant -- so experiment and try something new. If you think California rolls from the grocery store are high quality, then Chiso is too high of a class for you. The price isnt cheap, but its decent considering gourmet sushi is naturally expensive. The environment is suitable for a date or small group of friends. If you want to see the chefs in action, be sure to get in very early, because the sushi bar gets filled up quickly. The quality over price ratio is hard to beat here in Seattle.
