Great selection of fish. I travel a lot and haven't had sardine like that anywhere else. I sat at the sushi bar & talked with Saito while I watched him make my sushi. He was so fast it was amazing! His sushi case is on the side so you can see him work. I stayed long after I had finished eating and talked about sake with a regular at his bar who seemed to know a lot about sake and sushi. The fish was very fresh and beautifully presented. The sake selection was quite large and the waitress brought me a sake not on the menu that was delicious. Will go back when next in town.

Sushi should be fresh, clean, and presented tastefully. With this in mind, we went to this restaurant based on some positive reviews and the distance to our hotel (the Westin). The meal started off well enough with sake and some nigiri. Service was decent - it was a Wednesday night, and not very busy. When we got our sushi rolls (rainbow, saito's spicy tuna, and pikoro crunch), my wife picked up a piece of the rainbow, and noticed a hair rolled in with the sushi. Even more disgusting, it was not the type of hair you would find on a person's head - for the sake of the reader's appetite, I'll just leave it at that. The server apologized, and the rainbow roll was removed from the bill. But let's be honest here, after finding that kind of hair, would you enjoy the rest of your meal? To add insult to injury, this was supposed to be the last meal for our wedding anniversary vacation. I've eaten sushi at Tojo's in Vancouver BC, Oiishi in Massachusetts, Saburo in Oregon, and even some sushi restaurants in AZ, and I've never had this happen to me before. Needless to say, this ended up being my worst sushi experience ever -Sushi eater beware!

We sat on the counter inbetween tables and the bar. Sashimi was wonderful. They have an excellent menu and it wasn't busy on one of these sunny Friday nights when I went with my gf. We ordered about 30 pieces of Sashimi and some fried food, like crab tempura and baked hot oysters( my gf's tongue burned). Chef was very nice and staff were excellent. The bill came out less than 100 dollars with two large bottles of beer which i thought was normal. We usually pay that much when we go to like 'i love sushi' or 'umi sake' or many many sushi rest.
Overall the dinning was excellent and we were treated so good. I think my gf was only non-asian person when we were dining which I thought it was more playful.
Pros: Excellent choices of sushi, great services

I eat lunch out alot, and have gotten in a rut. Wandered back into Saito's today and remembered how good it was. The lunch special was a sort of Bento box presentation, with four REALLY tasty portions and lots of little extra treats. Each cubby was like a new surprise. It was under $10. Compared to what I got at Qube (for twice the money) Saito's is a gem. I agree that the ambiance and service at Saito's will not amaze you, but the food is so consistently good that you'll forget about the rest. We have so much good sushi in town, but only a couple of truly great places, and this is one of them.
Pros: Quality, value, consistency
Cons: Parking, so-so service, could use a little re-model.

I was referred to Saito's by a couple of locals the evening before. I have been to several sushi restaurants in the area and never heard of Saito's. Since the referral came from a Japanese and a Korean local I had to assume that this restaurant was very good.
Upon my arrival to Saito's it was very quiet for the dinner hour. I headed all the way to the back to sit at the sushi bar since I was alone. The restaurant is not designed in a great way since the sushi bar is all the way in the back next to an open kitchen. When I sat down at the sushi bar it took several moments for either one of the chef's to acknowledge my presence.
A waitress came by and offered me tea and provided one of the most sophisticated sushi menus I have ever come across. The restaurant offers one of the widest selections in sake I have ever seen. I would encourage any patron to take advantage of the selection and sample a few different types. Second, the sushi selection was great and offered some of the more exotic fish daily. Japanese Spanish Mackeral,Blue Fin Tuna, Snapper, and Bonita. I was impressed with the selection and eager to order.
Service was a bit of the issue since Saito is the only chef making sushi for the entire restaurant. At first I thought he was being rude by ignoring me, but once I got his attention he was very friendly. Saito let me sample a few different types of sashimi and mentioned that all of it is offered daily.
Looking at the other patrons...it seems that this is an authentic Japanese restaurant since many of the patrons were Japanese or asian. This was good to see and certainly a sign that the food is authentic.
Overall the food was very fresh and melted in my mouth. The service and ambience does need some work since the restaurant was not full, but I was only offered two drinks. Finally, the price of the sushi is a little higher than other restaurants..but the value is tin the sushi.
Sit at the bar and let Saito choose your meal with the sampler.
Pros: Authentic Japanese Restaurant, Wide Sushi Selection, Freshness

Being a Seattle resident, and a huge lover of all things sushi, I was very excited to stumble into Saito?s a month or two back- it was easy to get a table, and the food was tasty. So with friends in town, I made Saturday night reservations at eight o?clock for three of us, and we were all excited. Unfortunately it was an evening filled with several disappointments. First, we arrived on time and despite having a reservation, we were told that it was going to ?be a long time? before we could sit down. What makes this frustrating was that after four polite attempts to ask the hostess how long she thought it would be to get a table, she would not give an answer. 45 minutes later, we decided to order food at the bar, and after doing so were able to sit down. Shortly after sitting down and ordering a small round of sushi, we were told that the restaurant had run out of sushi rice! When we confirmed this with our server, and asked if this happens often, the answer was yes! With so many fantastic sushi options in Seattle, spotty service, and what amounts to terrible planning- I strongly recommend going to another sushi spot.

I have been to Saito's before. At that time the service was soso and the menu was ok. However, I think they got a new chef??? or something,,,their special menu was great. We ordered the Appetizer sampler and I was amazed. Our server maid great Sake and food recommendations. The Sushi was awsome,,,the Otoro(most fatty), Toro, and specialty of the night. If you are a Sashimi person do omakase appetizer sashimi before your meal it is mind blowing

Their other stuff is average, but their Tonkatsu and Tonkatsu sauce rules! Their sauce taste like it's made in the kitchen instead of that pre-bottled stuff! Also, unlike the cheap teriyaki places, their breading don't fall off! The thickness is also correct, being about the width of a finger, rather than that thin stuff that's over fried in your ma and pa teriyaki place. Too bad their other stuff is average.
Their lunch specials aren't that great either.

Saito's is probably one of the best, if not the best place to eat sushi in Seattle, but be prepared for astonishingly poor service. It took literally 40 minutes to get my sushi from the time I placed my omakase order. The fish was top notch, including Japanese snapper, baby hamachi and Spanish mackeral. I would have been more forgiving of the delay from order to food if this was cooked food, but we are talking about sushi here. Still, the sushi was so good, I will return.
