Always fun to walk by and to see what they are making. If you are lucky you'll see them making the cheese curd in the viewing room. Very entertaining and also educational to see how things are made. They have samples that you can try, I like the freshness and very flavorful. The store serves sandwiches as well with their cheese, and it's always packed. But worth the line up if you want some good high quality cheese. Their cheese curd is really expensive though, a little container is close to $8. I want to cheese curd to make poutine but can't get myself to spend that money. I would recommend stop by this place grab a sandwich and read on how cheeses are made.

Living in Seattle, I'm a bit spoiled because I can head to Beecher's store in Pike Place or get their cheese from any number of local shops in the area.
That said, I was on a food blog the other day when I heard someone raving about Beecher's mac & cheese. I have heard this previously but since I love to cook and have a favorite mac & cheese recipe (several actually, one featuring extra sharp white cheddar from Upstate NY), I didn't really think much of it. Just for the heck of it, I headed for Pike Place (January's a great time to go...not too many tourists, hee hee) and gave their 8 oz size a try. HOLY CRAP...it's almost as good as homemade! I couldn't believe the lovely balance of tart and creamy...every bite was simply melt-in-your-mouth amazing and I was very sad when I finished the entire thing sitting there in Beecher's storefront. Other mac & cheese has been ruined for me now.

We took four cheeses back to the room with a loaf of crusty bread and had a midnight feast. The folk here are wonderful in their discriptiveness of the cheeses and will allow you to try just about any of their cheeses. We also picked up a couple of crab at the Pike Place Fish market 1, to go with the cheeses. there is a kitchen basics shop in the market where we picked up the woden mallet and smal forks for them. last we took a nice bottle of wine also. the perfect end to a wonderful day.

Simply the best grilled cheese sandwich I have eaten! I ordered the "Flagship", a great concoction of grilled cheese, sliced tomato, and basil leaves. It was a filling and delicious lunch. The macaroni and cheese looked delicious as well. While I was waiting for my sandwich I sampled a fabulous pumpkin spread that could be used in either an hors d'ouvre or a dessert. A great "lunch-to-go" place.

Ok so we stumbled on to Beechers one day down at Pike Place and their macaroni and cheese really is the "Best." Very rich and delicious!!! MMM!!! A small cup is all I can handle. It is so good and very filling. The price is a little high, but definetly worth it every once in a while. You can also watch the cheese making process and sample cheese curds and their various cheeses while you are there.
Pros: exceptional food, samples, educational

I am a self-described cheese snob. Can't get enough of the stuff - especially the gourmet varieties. Beecher's is my own little slice of heaven. The smell when you walk through the door is remniscent of the cheese shops in Europe. Heavenly! I often get the little tubs of spread for crackers if I'm having a party - they're always a hit.

Wow - have you had the absolutely decadent, fatty, tasty, unbelieveable Mac & Cheese that Beecher's makes? In addition to supporting a local artisanal food business, you are delighting your tastebuds and hardening your arteries all in one bite. It is so freaking delicious I can't stand it. In fact, just writing about it has made me want to go to their store in Pike Place Market and buy some mac and cheese for later on. so good. go eat it.

Of course I can say that Beecher's is a good place to get cheese. But it's also even more than that, since they are so knowledgable about cheesemaking, that you can get lots of information about cheese too. They have very good books about making cheese yourself. You can buy good-tasting cheese, too, of course, and they are even giving customers a free cutting board until Christmas, I think.

Beechers Handmade cheeses operates out of a super-premium storefront near the original Starbucks in Pike Place market. There, they’re able to lure in townies and tourists with samples placed within shuffling distance of the sidewalk.
The samples are delicious and varied, as are the cheeses they actually sell, both in the storefront and in select retailers throughout Seattle.
They also apparently have educational cooking/tasting classes and programs to get locals schooled on appreciating fine cheeses. There’s great wine, coffee, fruit and bread here, so why the heck not?
