Two locations in Eugene: one at Oakway Center, one at 29th & Willamette. The Oakway Center location is newer -- large and airy with some outdoor seating when the weather is good. Recent renovation at 29th and Willamette means there is now a bar area. They make great big margaritas, and the bar is full-service.
There's a special lunch menu, but you can order off the dinner menu any time of day. Meals start with fresh chips and terrific salsa, and there are lots of choices (although tastiness does vary.)
I've ordered Tacos al Carbon pretty exclusively for the past three years. Marinated, grilled chicken is stuffed into soft corn tortillas. A dollop of guacamole, a sprinkle of parmesan cheese, and delicious pico de gallo garnish the top. Meals come with beans and rice -- I opt for the cholesterol-free Rancho beans. Plain old bean and cheese burritos are tasty, and the Ranchera enchiladas are very good. Many people swear by the Mexican pizza and Nachos Chapala. There are 12 vegetarian means (they do include dairy), but I've heard mixed reviews about the flavors and textures of these items. You can even get a cheeseburger with your Margarita, if you want...
Chapala does catering (fun taco bar!) and really wonderful appetizer trays for parties. Service is always with a smile, and both restaurants are clean as can be. Rarely have had to wait longer than a couple minutes to get a seat at either location. Top end menu item today is $12.95 (before drink or tip.) We often have leftovers from our dinner entrees.
