Finally out from behind the auspices of construction, Cafe Absinthe is a posh and romantic spot that delivers the goods when it comes to food and service. Beautifully decorated in red tones, the dining floor sits in front of an open kitchen. Two long banquettes line the room, with lots of tables for two. Our server was helpful, but just aloof as to not hover. The first course options are good openers for the well-prepared entrees (I recommend the filet, medium rare). Desserts were hard to resist, and I really tried my best, I swear. The room is cozy, despite its communal feel, and it is hard not to be impressed.

Great food! Everyone liked their entree, which included steak, salmon, scallops, and a few other choices. The presentation was very appealing and the food delicious. The waiter was very knowledgeable, not only regarding the specials, etc. but also how any proposed modification would affect the overall flavor of a given choice and was very helpful in helping us decide what to select.
The cosmopolitans were delicious and a cut above what quality I would expect from a restaurant.
The appetizers were also good, and the chef sent out an additional, complementary appetizer (a new concoction) for us to try.
There is an adjoining bar next door but I did not see how that was.
