This place is fun and has good food. My husband always says a good sushi place will be out of everything at the end of the night, because they need to keep all their fish fresh. This is true of Mt. Fuji. A few times they were out of what we wanted, they only bring in what they think they can sell. We like that, it gives us the impression that everything is super fresh, which is important when you are eating sushi in a strip mall in Colorado. The service, as another viewer wrote, is a little odd, but not uncommon for a sushi place, japanese restaurant. We love the way they treat the kids, like they are happy to have them, and the little hibachi show is entertaining so the adults can relax and have a cocktail while the kids watch the "show" that is dinner. I highly remommend this place for families. Not great ambiance, but this is not for a dark date night place, it is for a fun family dinner with a little bit of a different experience. The hibachi portions are large, so you may want to split them for the kiddos.
Pros: Fun and different! Great for families

When I moved here from New York I knew I was going to miss the sushi being delivered to my door. That was until I found Mt. Fuji. I was very excited to discover that they deliver. Their sushi has been fresh each time we have had it. They are very friendly and seem to recognize my voice when I call now. They also have a couple of hibachi tables should you decide you prefer that over sushi. The actual restaurant is small, so get there early if you want to dine in. They are also reasonably priced in comparison to other sushi restaurants in the Denver area.

We just got done eating at Mt. Fuji for the second time. The first time the service was horrendous but after hearing some good things about it we decided to try it again. Again, terrible service, did not recieve what we ordered and when I tried to convey this to them, I was disregarded. They finally realized the error(unfortunately after we were done) and corrected the bill, but made no attempts to do anything to make us happy. I am terribly disappointed with Mt. Fuji and cannot recommend it whatsoever, nor will we ever be going back there.
Pros: Close, convenient
Cons: Service, attitude, price

WOW!! We count ourselves very lucky to have a WONDERFUL sushi resturant in Castle Rock! Not only is Mt. Fuji clean, the sushi is always fresh and good tasting. They also feature a habachi style seating in half the store where you can have a sort of mini Benehanna experience. The staff is VERY friendly and the food is terrific!
