My girlfriend and I clearly ordered a comon menu item. I asked for a few minor and routine additions. I have done it many times in many other Vietnamese restaurants with consistent success. The food was brought, but no utensils were ever given to us. (Interesting how a waitress can bring food, place it on the table, and then just walk away. (Again, NO UTENSILS. I had to go to a nearby table and retrieve utensils). Then, I noticed IT WAS NOT WHAT I ORDERED! I called for the waitress and very kindly explained it to her. (All the waitress did was ARGUE). I did not go there to argue. That was unpleasant in itself. What the waitress did not know is that I AM WELL VERSED IN VIETNAMESE CUISINE. I know the food, how it is served, and the prIces. Well, this fair was very high, the quantities were less, and the quality of the beef was not good. That is a fact. I spent the money, received far less than I would elsewhere, and the quality was not good. Add to that an arguing waitress, and I could not get out of there fast enough. I didn't even wish to order tea. I did not find the exchange with the waitress enjoyable, nor did I care to attempt to relax further there. It just wasn't happening. So, I called the next day and asked to speak with a manager. A delightful fellow took my call. He explained that he understood what happened, and remembered me from the evening prior. He agreed with me on the issues and invited me to come in again, as he would "take care of me". Suddenly a voice entered the conversation. I was a bit astonished, and discovered it was "Thuy". There was no introduction. she was just listening, without my knowledge. She was very abrasive and quite pushy. Rude, in fact. She dwelled on the length of the conversation. (She should have been thrilled that I took my time to apprise her of the problems there and of my far less than acceptable experience, rather than play hard defense and aggressive offense. She only served to worsen my impression and support the unsavoury demanor that chased me away in the first place). Well, after the young man was successfull in appeasing me, this next individual did nothing but stir the problem even further. (Interesting though, THUY AGREED THAT THE BEEF WAS NOT SERVED CORRECTLY, yet neglected to perform a remedy. Offered nothing, but further, that same argumentative demeanor surfaced). I just don't need it. Agreed, many people don't know the authenticity of the food i. e. the way it should be. If you are unfamiliar, have no desire to be familiar with, don't mind paying more for less, then this place suits you. It is commercial and simply a business. I saw no pride in the establishment, just argument and a condescending attitude that thoroughly unimpressed me, along with the poor pho (soup), and unnecessarily smaller portions and higher prices. I would never return. Sorry, there are plenty of competing places that provide a pleasant venue for your experience, to include some basic courtesy, that I did not receive there. Oh well, it happens. It just won't happen to me again. At least, NOT AT CHEZ THUY!!!!! Pros: Boulder is a nice place to be Cons: Food and service was poor

Past visits to this hot spot have been satisfactory for my companion and I. Food was good, service was prompt and we left with little or no complaint. Our most recent experience was POLAR OPPOSITE! We showed up at 7:30 on a Sunday night and the place was packed. There was a couple at the bar waiting for a table when I approached the host station. It took a while before one of the scurrying servers came to greet me, or shall I say, scream "5 MINUTES!" at me. So we sat down. A few more groups came in and someone finally came to take down names. Apparently no one believed we had actually been there a while before the others and were passed over twice for seating. When we were finally in a booth, at 8:10, our drink order was taken and we never saw the server again. At 8:30 we decided to leave. My companion and I spent the last 15 minutes of our dinner break time at Taco Bell where we were served promptly and without error. It was cheaper too. Pros: Good food Cons: horrible service, seriously.

Chez Thuy has a great selection of Vietnamese food for take-out or dine-in. Although it maybe is a tad pricier than some of the Chinese restaurants in the area, Chez Thuy's food is definitely of higher quality and comes in sizable portions. My favorite menu items are the vermicelle dishes--fried rice noodles with honey and pine nuts-- delicious!

Most servers there do not even look at you while taking your order. It seems as if they want you out soon and thats it. Fifteen minutes after placing your food on the table, they will come and throw you the bill expecting you to pay right away... As a matter of fact, we were interrupted by the server while we were eating to ask as if we could possibly pay at that time because his shift was ending and he needed the tip!! Are you kidding me? Bottom line: Really bad service Great Vietnamese food with wide selection of seafood Food is presented in colorful dishes which is nice Everything is fresh

Chez Thuy has always had bad service. It is cold and offering the bare minimum at best. I am glad that other reviewers mentioned this as well. I recently went to Chez Thuy since their remodel/construction. I didn't notice any difference inside, but the food changed. I ordered the stand-by Pho, beef noodle soup. It was horrible. I don't think there was any anise in it at all. There was hardly any flavor. Very disappointing. Of course, I could not tell my server about it, since I never saw him again. While I was there, I noticed that the person behind me got the wrong order, and had to stand up and flag someone down to get him the correct food. The person in front of me had to stand up and flag someone down so she could get a to-go box. No one paid attention to her until she walked over to the supply stand to assist herself! Of course, they didn't do more than look up and let her continue to get her box and pack the food herself. I also had to do the same. The arrogance and laziness of this wait staff is perplexing. There are so many great restaurants in this town, and many in the metro area serve Pho. I would recommend those other places until Chez Thuy stops taking their customers for granted. I've eaten at Chez Thuy several times, and I've had a good experience every single time. Although I did sometimes find the service a little lacking, the food was so good that I didn't mind. The prices are a little higher than many Asian restaurants, but I think the extensive variety of the menu makes up for it. Last time, I tried their Pad Thai (not a Vietnamese dish), and I think that I will stick to the traditional Vietnamese dishes next time. The Pad Thai actually didn't really taste like Pad Thai. But it was not bad.

Pronounced Shay Twee, this is by far my favorite Vietnamese restaurant in the area (not that there are that many choices, unfortunately). The menu is like a novel - so many dishes! And it's all delicious. Affordable, too. Great atmosphere, great food. Wish I could eat there more often. Try the iced coffee!!
