OK, so there's alot of differing opinions about the Rio. The truth- it is one of the best places in Boulder. Nowhere else can u go for the atmosphere, overall food quality and delicious margarita. As a long time regular I'm going to lay out a set of rules to keep in mind if u have never been there and respond to the 'naysayers,' which is bound to happen when u serve as many people as the Rio does.
1- the price. u can be in and out with a margarita and entree for under 20$. Try that anywhere else in Boulder that isn't a dive inside like Juanita's. 2- to the one who complained about a chicken bone in her enchilada. This isn't taco bell, they use real chickens, which have bones. Did u know that?
3- The trick to the Rio is keeping things simple. Its high volume and cheap, so u cant expect "Frasca-like" service. Also the waitstaff is mostly college kids looking to pay their bills and have a good time while they work. I have met so many people that come every week, alot of families, because they know the faces and love the prices. Anywhere else in town you will pay 8$ and up for a margarita that has less tequila.
Did you know the Rio's has 3 shots of alcohol? Hence the 3 limit. 4- The rooftop patio is one of the best on earth. Problem is there is no kitchen or bar on the roof so things take longer, plus they have a whole downstairs with hundreds of hungry, thirsty people. How to avoid that? Grab a drink downstairs and carry it up, or order extra when the waiter "finally" arrives. Be patient, u are lucky to be served in such a beautiful place! 5- Cinco de Mayo at the Rio trumps any other Cinco party.
Menu tips- Bobby Flay isn't cooking, got it?
-Guacamole is amazing. Simple, delicious, no unnecessary ingredients.
-Burrito de Carne smothered in Green/spicy or ranchero sauce. So good, especially w/ a margarita!
-Cheese queso appetizer
-Enchiladas,Tostadas,Chicken Salads,Fajitas
-Agave Martini on the rocks= Top shelf margarita for 8-9$!
Pros: Awesome food, margaritas and service. Rooftop patio, "Garage" seats.
Cons: Can get a busy on weekends, but worth the wait!

I felt the need to share after reading the bad reviews regarding the service. I just got back from dinner and happy hour there, and had excellent service both from the bar, and at the table. The staff from the moment we walked in and were greeted by the hostess, until we left at the end, could not have been more gracious and friendly. The bartender was accomodating and tried to make my friend a grape martini, even though it wasn't on the menu, and even experimented and gave him a sample before making him order. The waiter was excellent and so friendly. The food was great. Being from the east coast, and having been to many restaurants in NYC, this place certainly stacks up, only with better service. My friend had the iceberg lettuce to start, I had the Jax chowder, both great, and large in portions. Then, he had the scallops, and the mushroom bread pudding was unbelievable. I had the special, Jambalya, which was not only large in portion, but delicious. We shared the banana beignets for dessert, and we both were moaning with pleasure! And the bill was completely reasonable, and surprisingly low. We were both so pleased, and happy!

I took my grandparents her for lunch and they loved it. I ordered a turkey sandwhich which was great...good bread. I love the ambiance, its relaxed and a little eclectic, but not too weird for the grandparents. Everyone was friendly and everyone I was with loved their food.
Pros: Great food, relaxed, friendly, layed back, healthy options, great for lunch

I have lived in Boulder many years and tried many restaurants here, but was blown away by Bacaro's friendly staff and delicious food. Boulder is a busy restaurant town and I always find myself in a busy atmosphere than can be less than accomodating. Bacaro's atmosphere and staff made the wait for food and drink an enjoyable experience. Their patio and upstairs bar turn it up on Friday night with the accompaniment of a live band. The dinner crowd was busy and although I waited ( something I expect to do anywhere on a Friday night) my waitress came by with smiles and jokes to keep my friends and I informed and entertained. I will definitely find myself back in Bacaro for their delicious eats and lively atmosphere.
Pros: Fun place to unwind, eat and drink. Also, they now offer parking
Cons: not a romantic place on weekends, but very nice during the less busy week

We had a wonderful seafood meal, both small plates and entres. Food is artfully presented with creative combinations such as seared scallops over a done-just-right risotto cake infused with a fragrant sauce. We tried about 4 of the chef's creations and all were awesome. Service was friendly. We liked the casual yet classy atmosphere.
Pros: Chef doing some very creative, tasty things with seafood

this is like straight out of boston. great food, great prices, wireless internets, webs, great interior with open family style eating spots as well as a great little intimate nook for a couple. live music all the time, including a sunday night irish music jam. stouts and great beers on tap. we come here to work during the day. a good place to meet people at night.

A good after work happy hour choice on the west end of pearl street. I've also swung by with friends after a good hike. The summer early evening sun feels great up on the rooftop bar and the pub food is quite nice. When it's colder, the bar below features a (gas) woodstove and attentive waitstaff.

We got to sit on the beautiful outdoor patio and enjoyed the sun going down with some good friends that came into town. Tasty salad, nice selection of drinks and the service was excellent. Reasonably price for the quality of restaurant.
