As a former employee. I know the in's and out's of the place.
The crust is pre-made at the Flying Tomato headquarters in Champaign. It is shipped out to the resturants, in boxes & is bagged & stacked like bread.
The "pizza" makers, just take that pre-fabbed bread and put the toppings and sauce on the thing & throw it through the conveyer.
Any left over pizza it put in a box so the corporation can count them & insure that they are not losing any pizza or money along the way.
They only pizza worth the money there is the Chicago style Deep dish.
The Cookies are good too.
Pros: fast, & easy, and a decent lobby.
Cons: Not exactly a true pizza.
