Chicago actually has three signature pizza styles: thin-crust (yes, there's a Chicago-style thin-crust), deep-dish (or pan) and stuffed. Carmen's doesn't offer Chicago-style thin-crust (though they do offer a thin-crust pizza). That's not what I'm talking about though. Carmen's offers a very good stuffed pizza. However, their deep-dish pizza is the best I've ever had. I'm not sure I should try to describe the pizza because I know I won't do it justice. Do yourself a favor and try it yourself. Unless you hate cheese, you won't be disappointed. \r

For the Evanston lunch crowd, they offer a lunch buffet. It's a little expensive, but they offer a nice spread of pizza, along with some other things that I usually skip in favor of pizza.
